Our "grappe"
These precious distillations are born in copper alembics and
among essences which evaporate taking shape from marc, or better
from what is left in the cask after grapes fermentation.

The
Process
The
marc is distilled immediately at the end of the fermentation
. This is done by hand with an intermittent “bain-marie”
system with a cycle lasting three hours. The boiler, loaded
with 50% of marc and 50% of water, is heated up, obtaining a
homogeneous diffusion of the heat . The vapours, evaporating
with natural pressure, go along the distillation column and
reach the condenser with the first fractions, called heads of
distillations. These are discarded because they are richer in
methyl alcohol and pungent smells.
The second fraction , which is the actual “grappa”
with its typical elegance, is kept in special wooden or steel
ageing casks.
